Aebleskiver Recipe

Today’s post is about Aebleskiver (or Ebelskive), the Danish pancake/pastry that is sure to wow your guests!  Serve them with jam and powdered sugar for a delicious, sophisticated addition to Sunday Brunch.  The ingredients (listed below) are very “pancake-like”.  If you don’t have buttermilk add a tablespoon of apple cider vinegar and let it sit for about 10 minutes to get the same flavor.  The key to this batter is to mix all the ingredients together except the egg whites and then just before cooking fold in the whipped egg whites to create a light batter.  And as always cook low and slow on your cast iron.  Enjoy!

  • 2 eggs, whites, and yolks separated
  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons butter, melted, plus extra for the pan
  • 2 cups buttermilk
